Korean KimChi

This recipe is from Nourishing Traditions.  The best whey to use is what we get from Full Quiver.  If you don’t have whey then extra salt will work.

1 head Napa cabbage, cored and shreddedARC_0124331.jpg
1 bunch green onions, chopped
1 cup carrots, shredded
1/2 cup daikon radish, grated (optional)
1 tablespoon freshly grated ginger
3 cloves of garlic, peeled and minced
1/2 teaspoon dried chile flakes
1 tablespoon sea salt
4 tablespoons whey (or, if not available, use an additional 1 tablespoon salt)

Directions

Place vegetables, ginger, garlic, chile flakes, sea salt, and whey in a bowl and pound with a wooden pounder or a meat hammer to release juices. Place in a quart-sized, wide-mouth mason jar and press down firmly with a pounder or meat hammer until juices come to the top of the cabbage. The top of the vegetables should be at least 1 inch below the top of the jar. Cover tightly and keep at room temperature for about 3 days before transfering to cold storage.

    I am going to introduce this article under my anti-inflammatory diet page or under Asian diet page of my blog. Although no one has pin point out that Kimchi is anti-inflammatory diet but that’s because people, here in U.S. don’t know much about it. I am going to copy its title and put it on those pages I mentioned earlier on my blog. Then more people can read and get benefit from your article and more people can get into your blog, directly as well.

    Sorry, It seems like it’s not on permalink. I can’t do copy only the title. I am not familiar with this e-world tech. well, too bad. (I am so so so new on this blog world. My blog is only like two weeks old.) But I was going to write about Kimchi anyway one day and I will. So check it out then on my blog. I thought your post could be nice for my reader as well….

    p.s. Posting this article itself is nice but don’t try to actually make Kimchi! ^-^ Because, it’s really not that easy! ^-^ I had never got succeed!
