Sweet Pepper Salad

The sweet peppers we received in the first produce co-op share have become everyone’s favorite!   Here’s a great way to addpeppers them to a salad.  This recipe also uses the green leaf lettuce from the co-op.

Tip: To prevent your lettuce from wilting too quickly, remove the leaves from the stalk, wash them, put them through a salad spinner or dry thoroughly, wrap them in paper towel and store in an air-tight container.  An ice bath will also perk them up!

Sweet Pepper Salad

Green Leaf Lettuce – chopped up (from co-op)
Sweet Peppers – sliced (from co-op)
Cucumbers – sliced (from co-op)
Carrots – sliced (from co-op)
Broccoli – chopped up (from co-op)
Extra Virgin Olive Oil & Juice of a Lemon
Sea salt & freshly ground pepper
Raw nuts, if desired

Mix together all the veggies in a bowl.  Make dressing with 3 parts oil to 1 part lemon juice.  Whisk it together and drizzle over salad.  Add nuts and salt and pepper to taste.  Enjoy!
