Sweet Pepper Salad
The sweet peppers we received in the first produce co-op share have become everyone’s favorite! Here’s a great way to add
them to a salad. This recipe also uses the green leaf lettuce from the co-op.
Tip: To prevent your lettuce from wilting too quickly, remove the leaves from the stalk, wash them, put them through a salad spinner or dry thoroughly, wrap them in paper towel and store in an air-tight container. An ice bath will also perk them up!
