Peanut Butter Banana Cake

Pre-heat oven to 350 degrees F. Line a 8 or 9-inch cake pan with greased parchment.
Wet ingredients…
Mix in a bowl:
4 super-ripe organic bananas
1/2 cup organic natural [non-hydrogenated] peanut butter or sunbutter
1/4 to 1/3 cup honey or agave nectar
2 organic free-range large eggs
2 teaspoons vanilla extract
Dry ingredients…
Whisk together first, then beat into the wet mixture till smooth:
1/2 cup coconut flour (view this post to learn more about coconut flour)
1 cup fine almond meal (view this post to learn more about almond meal)
Cinnamon to taste
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt [if using salt-free peanut butter]
Pour the batter into the prepared cake pan and place in the center of the pre-heated oven. Bake until done – about 28-35 min – do the toothpick test to make sure. It should come out clean. For some ovens it will take less time and other more time.
Serve with fresh whipped cream or organic strawberries. Another twist to this great recipe is to mix raw pieces of walnut into the batter! Walnuts are a great source of Omega 3s. Enjoy the cake hot or cold and after every bite you’ll have to remind yourself that you are NOT cheating. :
